Quinoa Pudding
Serves 8

1 c. quinoa, rinsed
4 c. skim milk ( I use Vanilla Rice Dream!)
1/4 c. turbinado sugar (raw sugar)
1/4 c. honey
2 large eggs (optional)
1/4 t. cardamom (cinnamon is good also)
1/2 c. golden raisins
1/4 c. chopped dried apricots or mango

In a large saucepan, bring quinoa and 3 c. mile to a boil; reduce heat to a simmer and cook, stirring occasionally till tender - about 12-15 minutes.
While quinoa is cooking, whisk sugar, honey, eggs ( if using) cardamom and remaining cup of milk in a medium bowl.
While stirring the quinoa and milk mixture constantly, add in sugar and egg mixture. Stir to combine and add in raisins and dried fruit.
Cook, stirring constantly until mixture is thick enough to coat the back of a spoon, 3-5 minutes. Pour pudding into a 2-quart dish and let cool slightly. cover surface with plastic wrap or waxed paper, and refrigerate until cool, at least 2 hours and up to 2 days.
This recipe allows easy substitutions for your favorite fruit or milks.
